Classic Caesar salad dressing contains raw eggs and anchovies. Here is an alternative that tastes similar.
|1 head||washed and dried, organic romaine lettuce, hand torn in bite-size pieces|
|3 T||shaved Parmesan cheese|
|1 C||croutons, made from toasted, organic sourdough bread|
|½ C||extra virgin olive oil|
|1||clove fresh garlic|
|1 tsp||sea salt|
|¼ tsp||dry mustard|
|fresh ground pepper, to taste|
|few drops of Worcestershire sauce|
|½ tsp||anchovy paste|
Place lettuce in bowl or on individual salad plates. Sprinkle croutons on top. Blend dressing ingredients in blender. Pour dressing on lettuce. Top with Parmesan shavings. Serve olives as a condiment.
