Organic Chocolate Chip Cookies
Need we say more? Use all organic ingredients, for the best all natural, organic cookies!
1 C unsalted, softened, preferably raw butter
½ C raw butter, ½ C nut butter
½ C coconut oil, ½ C nut butter
½ C Sucanat or other raw, organic sugar
2 free-range eggs
1 tsp vanilla extract
1 tsp sea salt
1¼ C spelt flour
¾ C rolled oats 1 tsp baking soda
12 oz chocolate chips
½ C raw, macadamia nuts, chopped
¼ C dried coconut, shredded, unsweetened
¼-½ C freshly grated or candied ginger
Preheat oven to 350°F. Cream together butter, nut butter and/or coconut oil and sugar until light and fluffy (about 2 minutes). Beat in eggs and vanilla. In another bowl, sift flour, baking soda and salt. Fold into butter mixture. Add oats, chocolate chips, and nuts, if used. Drop rounded spoonfuls of batter onto greased cookie sheets. Bake for 10 to 12 minutes or until golden brown. Remove from pan and allow to cool on a wire rack.
Makes about 6 dozen.
