Fresh Green Beans
Crisp, bright green, steamed beans… summer’s bounty.
1 lb fresh, organic green beans
2 T extra virgin olive oil
½ lemon, juiced
2 T slivered almonds
1 tsp hemp or chia seeds
sea salt & fresh ground pepper, to taste
Trim the ends from the beans and wash well. Place in a vegetable steamer and cook until tender, being sure not to overcook. The beans should be bright green!
Place in a bowl and drizzle with olive oil and fresh lemon juice. Add salt and fresh ground pepper to taste. Try some exotic salts, like Fleur de Sel from France, salt from Hawaii, Ireland, and other countries. Salts have different mineral contents, colors and subtle flavors.
Top the beans with the almonds or seeds for a nice protein hit. It doesn’t get any better.
